Bacon Wrapped Chestnut Stuffing


Bacon Wrapped Chestnut Stuffing (gf) (df)

1 hour recipe from start to finish (including cooking time) 

Ingredients:

800g sausage meat (gf)
400g onion chopped
100g cooked and peeled chestnuts - cut into 4's
160g fresh breadcrumbs (gf)
1 bunch fresh sage - finely cut
1 tsp salt
1 tsp pepper
20 rashers - streaked bacon (I used smoked) 


Equipment:

Oven Proof Bowl / Ceramic Pot
Mixing Bowl
Optional - blow torch 

Method:

Pre heat your oven to 180C.

Fry your onions until translucent and leave to cool.

Line your oven proof bowl with the bacon rashers creating complete coverage of the bowl with bacon.

Once your onions have cooled, mix these and all your remaining ingredients in the bowl and then careful place in the bacon in the bowl. ANy Excess bacon, just fold over your mixture before placing in the over. 

Place in the middle of the oven for 45 minutes, take out and leave to cool. To crisp up the bacon you can grill before eating or blow torch to create that crunch.
