Chocolate Chip Cookies (gf) (df)
30 minute recipe, a really quick, easy dish to make.
Per slice (makes 10): 289 calories
(2.9g Protein, 35.7g Carbohydrates, 15g of Fat)
Ingredients:
175 g Gluten free self-raising flour
A pinch of salt
1 good pinch of bicarbonate of soda
115 g dairy free butter, very soft
60 g caster sugar
60 g light muscovado sugar
½ teaspoon real vanilla essence
1 large egg, lightly beaten
175 g choc chunks or chips (dairy free chocolate)
75 g walnut or pecan pieces
Equipment:
Several baking trays, greased
Wooden Spoon
Mixing Bowl
Method:
Put all the ingredients in a large bowl and mix thoroughly with a wooden spoon.
Drop heaped teaspoons of the mixture onto prepared baking trays spacing them well apart.
Bake in a preheated oven at 160° C (375° F) - for 7-9 minutes until lightly coloured and just firm.
Let them cool on the trays for a minute or so, then transfer to a wire rack to cool completely.
Store in an airtight container and eat within 5 days or freeze for up to a month.

I quite often make them without the nuts, so that’s easily switchable.
This is a dairy free recipe, so should perfect for you without the nuts, just make sure you use dairy free chocolate too!
Can these be done without the nuts as I av an dairy and nut allergy?
