Flourless Banana Pancakes (v) (gf)

Per pancake (serves 8): 57 calories

Ingredients:
150ml semi skimmed milk
3 medium banana's
2 medium eggs
1 tbsp coconut oil

Method:
Blend together in a blender (I use a nutri-bullet for mine) the milk, eggs, and bananas. If the consistency isn’t thick enough you can put less milk in or add another banana.
Melt the coconut oil in a pan on a medium to low heat, as you’ll need to cook the pancakes slowly so the banana doesn’t burn.
Pour a pancake sized amount of mixture in the pan (I usually get about 7/8 small pancakes out the mixture) and cook until bubbles appear or the colour slightly changes on one side, before flipping over and cooking on the reverse.
I serve my Flourless Banana Pancakes with Skinny Food co maple syrup and fruit usually raspberries or banana, but these can be served with anything so get adventurous, and enjoy!
