Healthy Scotch Eggs


Healthy Scotch Eggs (gf)

60 minute recipe from start to finish (including 20 minutes cooling time) 

Per slice (serves 8): 183 calories
(22.4g Protein, 6.4g Carbohydrates, 7.1g of Fat) 

Ingredients:

9 medium eggs
1 small onion, very finely chopped
1 garlic clove, crushed
500g Turkey mince
1/2 tsp dried Thyme
1/2 tsp dried Rosemary
1/2 tsp dried Parsley
4 level tablespoons plain, white, gluten free flour (little extra for dusting)
50g gluten free breadcrumbs
1 tablespoon vegetable oil

Equipment:

3 plates
Mixing bowl
Frying pan
Baking tray

Method:

Preheat the oven to 200°C, fan 180°C, gas mark 6.

Bring a pan of water to the boil, then reduce to simmer. Very carefully add 8 of the eggs and cook for 8-10 minutes. Drain, fill the pan with cold water and pop to the side for a few minutes to allow the eggs to cool, then peel and pat dry with kitchen roll.

While the eggs are cooling, mix together the onion, garlic, turkey mince and all the 3 herbs.

Divide the meat mixture into 8. Dust your surface with flour, roll each portion of mince into a ball, flatten into a circle large enough to cover an egg. Put an egg in the centre of the mince and use your hands to mould the mince around it, so it’s completely covered.

Roll each mince covered egg to smooth out the shape. My tip here would be to make sure your hands are dry and maybe have a little flour on them, so they don’t stick to the mince.

Beat the 1 last egg and pour onto a plate. Put the flour on another plate (I use Dove Farm flour for this recipe) and then your breadcrumbs on a third plate. Roll each egg first in the flour, then the egg and then the breadcrumbs. Place onto a baking tray and chill for 20 minutes in the fridge.

Heat the oil in your frying pan and fry the eggs, in batches, for 1-2 minutes until they start to turn golden brown. Then when they are golden brown, pop them into a baking tray and bake for 10-12 minutes until completely golden brown.

Then tuck into your warm homemade, healthy scotch eggs as a snack or with a salad!
