One Pan Egg Fried Rice (15mins) (gf)


One Pan Egg Fried Rice 

15 minute recipe from start to finish (including cooking time) can be easily adapted to be dairy free and vegetarian too.

Per portion (serves 2): 455 calories
(30.9g protein, 53.2g Carbohydrates, 13.1g of Fat) 

Ingredients:

1 tbsp olive oil
1 packet of microwave rice (250g)
1 tbsp gf soy sauce 
3 large eggs
1 tsp pepper
1 cup of button mushrooms
3 spring onions 
1 red onion chopped 
200g prawns (cooked or uncooked) 


Equipment:

Large Frying Pan / Wok
Mixing Bowl - Eggs

Method:

Fry your onions in the frying pan, until starting to soften. Then add your other veg, i've gone for mushrooms.

Whisk in your bowl the eggs and season with pepper. And pop your rice in the microwave for 2mins. 

Once your mushrooms and onions are brown, add in your spring onions, cooked rice, soy sauce and stir altogether.

Push the rice mix to the side of the pan and dd the whisked eggs into the pan on the side without the mixture, keep stirring to create a scrambled texture to the eggs stir for roughly 1-2 minutes, stir continuously. Once the eggs starts to cook and go hard, mix all the pan together with your rice mix. 

Then serve, i like to add a little chives or sesame seeds on top when serving, and enjoy your super fast, guilt free egg fried rice!
