Spicy Sweet Potato Fritters (gf) (df) (v)

Per fritter (serves 9): 56 calories

Ingredients:
3 medium eggs, beaten
3 spring onions, finely chopped
1 garlic clove, crushed
1 chilli pepper, finely sliced
1 tsp cayenne pepper
4 tbsp plain, white, gluten free flour(little extra for dusting)
1 tablespoon vegetable oil
1 medium sweet potato grated
2 small carrots grated

Frying pan

Method:
Preheat the oven to 200°C, fan 180°C, gas mark 6.
Mix together in the bowl the garlic, chilli, spices and spring onion. Then add in the grated carrot and sweet potato, followed by the egg and flour - all in the same bowl - mix it thoroughly (should be a sticky consistency).
Using your hands gather the mixture into small balls (usually makes about 9 balls) and then push the balls down to a patty.
Heat your pan to a medium heat and gently fry your patties, until golden on the outside, roughly 8-10 minutes. Then transfer on to a baking tray and place in the oven for a further 8-10 minutes. It's as easy as that!
I like to serve with a yogurt and mint or a sweet chilli dip, but these are so versatile they are good with poached eggs, breakfast dishes, alongside curries and you can adapt spice level to your taste too.
