Stuffed Halloumi Peppers


Stuffed Halloumi Peppers (v) (gf) 

30minute recipe from start to finish.

Per 1 stuffed pepper: 339 calories
(18.9g protein, 30.7g Carbohydrates, 15.7g of Fat) 

Ingredients:

150g cooked brown rice 
1 chopped red onion 
Cup of garden peas 
10 chopped mushrooms
Half a lime juice
Fresh coriander 
1 block of halloumi - chopped coarsely 
4 medium/large peppers

Equipment 

Deep Baking Tray 
Bowl
Frying Pan 


Method:

Pre heat your oven to 180C.

Fry the chopped onions in a large pan, once soft add the cooked rice and peas and fry for a future 2/3 minutes. 

Add the lime juice and chopped coriander to the pan. 

Equal out the bottom of the peppers, may need to chop a thin slice off so its flatter and can self stand. 

Fill each pepper 3/4 full with the rice mixture from the pan, then top with the halloumi blocks. 

Oven cook on 180C until the halloumi is brown and the pepper softens. (15-20mins)
